Botargo is a food consisting of stuffed fish eggs. It is a special product of the area of Messolonghi-Aitoliko.

Botargo is actually the eggs of the female Flathead Mullet (Mugil cephalus), which are treated with salt and then immerse it in wax to preserve them unaltered. Botargo is considered by many as the caviar of Greece and is especially popular among Greeks and other countries, mainly in Europe, America and Asia.
